Tomorrow in the cellars of Fruška Gora: whom to call and whom to ban

Fruška has cellars that accept you even without notice and those where you stand in front of the gate without an invitation. Here's how to arrange your day so that your taste buds don't get dull by noon.

A van full of people stopped in front of the gate of a large winery on Saturday at 12:30, everyone got out thirsty for a tasting, and the man at the gate just shrugged his shoulders:today we are full, you should have called. It is the most common scene of Fruška Gora on weekends — not because the houses do not receive guests, but because the best houses work by the hour, not by luck. The difference between a day you remember and a day you spend in your car looking for who's open comes down to three phone calls and in order of easiest to hardest.

Whom to call, and who can be banned

The division is roughly like this. Large, tourist-oriented houses have tasting rooms and welcome groups, but they almost always require advance notice on weekends.Winery Kovačevićat Irig's for organized tastings with a guided program, and you rarely go there without a reservation on a Saturday.Cat's basement, also in the vicinity of Iriga, has a restaurant next to the winery, so the day can easily turn into lunch — but you have to make an appointment.

USremski Karlovcithe density is the highest and there the banuti is most feasible:Vinumand family cellars along Karlovacka and around the center often receive casual guests during the day, andbasement Zivanovićis the address forBermetand medovača — a house specialty of the people of Karlovac with a protected geographical origin. Smaller houses inErdevik(Sukac and the surrounding wineries towards the western part of the ridge) work heartily, but sometimes people are in the vineyard, so calling an hour in advance is the difference between an open and a locked gate. A rule we learned on the field:call even when you don't think you have to. A five-minute conversation reserves a table and you find out what's open from the current vintage.

How to arrange the day so that the palate can endure

The mistake of amateurs is to take the first tasting at full force at ten in the morning, with red wines and five samples. By noon they are numb and spend the rest of the day trying through the fog. Go from lighter to stronger — white before black, young before barricaded, dry before sweet. Fruska gives excellentPeas (Italian Riesling), more and moreMalvasia and local white varieties, and from blacksPortugueseandFrankovka, with more and more serious trips toProkupac.

Practical hourly rate: first house approx10:30(white wines, 3–4 samples), another approx12:30 p.mwith lunch so that the body receives food before red wines, the third approx15:30for red and bermet at the end. More than three serious tastings in one day is an ambition that does not pay off — the fourth is not remembered. Who drives, takes a sip and spits it out or leaves the glass; Fruška is networked with local roads and the police are working. If you want everyone to drink, take a driver or spend the night in Karlovci.

Buy from the basement, not the store

The price of a bottle in the cellar is almost always the same or lower than in the city, and you get what the market does not have: the vintage that the winemaker just poured for you, often a sample that never reaches the shelves because it is produced in a few hundred bottles. Buy where you've tried it, while the taste is fresh in your mouth and while you know exactly which bottle you're looking for — the next day, you're choosing blindly in the store. Take the crate in your trunk, have a bermet from Karlovac for dessert and ask the winemaker to tell you which vintage is for now and which is for two years from now. That information is worth more than any label.

It is easiest to hang out in the family cellars of Sremski Karlovac (Vinum, Živanović and houses in the center) during the day. Big houses like Kovačević and Mačko podrum near Iriga ask for an announcement, especially on weekends.
How many tastings can be done in one day on Fruška Gora?
Realistically three serious tastings: around 10:30, 12:30 with lunch and 15:30. More than that dulls the palate, so you don't remember the fourth house anyway.
