Five pieces for the grill that the butcher keeps for himself

Hangers, flat irons and bavettes end up in minced meat for years. They deserve zar, salt and three minutes per side.

The best piece of beef in the entire peninsula is often taken home by the butcher. The hanger hangs in one place, there is only one per animal, and while most people are looking for rump steak and steak, it ends up in ground meat at a price that is worth both the butcher and the calf.

These five pieces share the same fate: full of flavor, cheap, and rarely displayed on the counter like a steak. They only ask that you know what you are looking for and how they are baked. If you have already mastered ittwo zones and a grill thermometer, here is the reward.

1. Hanger steak

The diaphragm muscle, hanging between the ribs and the thigh - hence the name.One piece per animal, distinctly beefy, almost visceral taste. There is a tough membrane running through the middle, which the butcher has to remove, so you get two elongated noodles. They bake quickly: strong direct fire,2-3 minutes per sideup to 54 degrees in the core, so necessarily cut across the fibers into thin strips. Through the medium it becomes rubber.

2. Flat iron (from braid)

It is removed from the upper part of the shoulder blade (infraspinatus) and is just behind steak in terms of softness. The catch is the membrane that runs down the middle: a good butcher cuts it and gives you two flat, one-dimensional steaks. Marbled, forgive mistakes.3-4 minutes per side, rest five minutes, cut at an angle.

3. Bavette (loin, abdominal part)

Thin, long, with coarse fibers that absorb the marinade like a sunder. He's looking for a short marinade with oil and garlic, wellvery high heat and only 2 minutes per side— the goal is crust on the outside, pink inside. Ideal for tacos and fajitas, but also on its own on the board.

4. Tri-tip (thigh top)

Triangular muscle from the top of the thigh, weighing up to a kilogram — the only one of the five that is cooked like a roast, not like a steak.Reverse sear: first in an indirect zone up to 50 degrees in the core, then a final blow on direct fire for the crust. The cut is demanding because the fibers change direction halfway through the piece.

5. Denver (from neck and shoulders)

Serratus ventralis — a densely marbled cut that was "discovered" by American butchers only in 2009. Soft, fatty, crispy even when you toast it for a shade.3 minutes per sideon high heat, salt only at the end.

Temperature is the only non-negotiable

All these pieces live in a narrow range between rare and medium. Because of this, the fibers are tightened and all the effort involved in the procurement goes to waste. Measure with a thermometer, not your finger:

Common rule:salt only after baking or immediately before baking, rest for five minutes under foil, and cut always across the fibers. With fattier beef goes the structure in the casa —plavac mali with its tannin and mascucuts fat better than any side dish.
