Five barbecue sauces with exact gram ratios

Chimichurri, Kansas City, garlic and two other sauces — each with a precise ratio, because barbecue without sauce is half the job.

You cooked the meat properly — two zones, grill, thermometer in the thickest part. And then you douse it with store-bought sauce from a bottle that smells like lab smoke. Too bad. The sauce is the last five minutes of work that decide the whole plate, and all five we make here fit into a bowl in ten minutes, with a scale and a spoon as the only tools.

When the meat is under control — and if not, start fromtwo zones and a thermometer— the sauce is the only place where you make mistakes without consequences. Here are five, from raw to cooked, with relationships that work.

Three raws: chimichurri, garlic and Alabama white

Chimichurriis the Argentine standard withasadoand it's not pesto — the parsley is cut with a knife, not a blender, to keep the texture. Relationship:1 bunch of parsley (about 40 g leaves), 4 cloves of garlic, 2 tablespoons of oregano, 60 ml of red wine vinegar, 120 ml of olive oil, 1 teaspoon of hot flakes, salt. Finely chop everything, combine, leave for at least 30 minutes for the vinegar to extract the onion. It lasts in the fridge for 4-5 days and keeps getting better.

Garlicis the Balkan cousin of the Lebanese toum — a garlic emulsion that stands upright. The trick is to add the oil slowly:1 whole head of garlic (about 50 g peeled), 1 teaspoon of salt, 15 ml of lemon juice, 250 ml of neutral oil. Garlic and salt in a blender to a paste, then oil in a thin stream alternately with a little more lemon. The result is a white, thick emulsion — best with chicken and kebabs.

Alabama whiteis a smoke-breaking mayonnaise base:240 g of mayonnaise, 60 ml of apple cider vinegar, 1 spoon of horseradish or mustard, 1 teaspoon of pepper, a pinch of sugar. It is applied in the last five minutes to the chicken — the acid and pepper cut through the fat of the smoked skin.

Two cooked: Kansas City and Carolina mustard

Kansas City BBQ Sauceis that thick, sweet, dark sauce that most people think of as "barbecue". The base is tomato, molasses adds color and depth. Relationship:240 g of pureed tomatoes (or ketchup), 60 g of brown sugar, 30 ml of molasses, 45 ml of apple cider vinegar, 1 tablespoon of smoked paprika, 1 teaspoon of garlic powder, a pinch of cayenne. Simmer for 20-25 minutes, stirring, until it thickens to coat a spoon. It goes withpulled pork and ribs, but only at the end — the sugar burns if you put it on direct heat too soon.

Carolina mustard sauce("Carolina gold") is the opposite of Kansas — yellow, tangy, no tomatoes:120 g of yellow mustard, 40 ml of apple cider vinegar, 30 g of honey, 1 teaspoon of smoked paprika, a pinch of cayenne. Boil briefly, 5 minutes. It is inimitable with pork because the mustard and acid cut through the fat better than anything sweet.

Rule of thumb: salt is added at the end, never at the beginning, as the concentration increases as it cooks. And none of the sauce goes on the meat before it rests — you pour it over the hot steak and the juices that should have stayed in the meat seep into the sauce.

The classic ratio is 40 g of parsley leaves, 4 cloves of garlic, 60 ml of red wine vinegar and 120 ml of olive oil, along with oregano and hot flakes. Leave for 30 minutes before serving.
Why does Kansas City BBQ sauce burn on the grill?
Because of the sugar and molasses that caramelize and burn already at around 150°C. That's why you only apply it in the last five minutes of baking, never on direct heat at the beginning.
How long does garlic last in the fridge?
Emulsion of garlic and oil in a closed container can be kept for up to 7 days. Lemon juice and salt extend the shelf life and stabilize the emulsion.
