Grilled corn: komusina, direct zar and salt at the end

A grain that bursts under the tooth, butter that melts into the grooves, lime that cuts the sweetness. Here's why salt goes last.

The smell of grilled corn does not come from corn. It comes from granulated sugar, which begins to caramelize at about 150°C, and from cumin, which ignites towards the end and gives off that slight note of smoke. Anyone who has ever felt the difference between a cob cooked in a pot and one from the grill knows that it is not the same vegetable.

But corn is also the easiest to ruin. Dry, stringy, with grains that fly like glass—that's a piston that's been exposed to direct fire for too long without protection. The trick is not in the fire, the trick is in the sequence.

First komusina, then klip

It gives the best resulttwo-phase baking. You leave the piston in the compost, but firstsoak in cold water for 15 to 20 minutes. Water gets under the husks and turns them into a steam chamber: the corn actually cooks in its own moisture for the first ten minutes, at around 100°C, and remains juicy.

Set it onindirect zone— we described the same logic of the two-zone fire in the textBarbecue without fail. Turn the plunger every 5 minutes. When the outer komusina starts to darken and steam comes out from under it (10-15 minutes), the cooking phase is over.

Only then do you remove the shells and put the clip back ondirect heat, at 200-230°C. This is where the caramelization happens. The rule here is brutally simple:2 to 3 minutes per side, 8 to 10 minutes total, with constant rotation. You're looking for dark gold, partially charred spots — not uniform blackness. Dark spots are taste; uniform gar is bitterness.

Why does the salt only go at the end?

This is a mistake we see on every other grill: someone salt the cob before grilling. Salt is hygroscopic — it draws water from the grain. A salted cob loses moisture more quickly on the fire, the grain shrinks and becomes tough, and the surface has a harder time capturing the color because the moisture vapor constantly cools the skin.

That's why it goesthe last one, on a warm, buttered cob. Butter, like a fat, transfers the flavor and creates a film that keeps the coarse sea salt standing, rather than melting and disappearing. The order is: butter while hot, then coarse salt, then lime juice squeezed over everything. The lime isn't a garnish here — its acid (pH about 2) cuts through the sweetness of the grain and the fattiness of the butter, just as it does on the plategrilled fish.

The sugar in the corn begins to turn into starch within an hour of picking — that's why the cob from the market always wins the one that has traveled for three days. Check: the silk on top should be moist and bright, the komusina firmly pressed and green, and the grain splashes with milky juice when you press it. Dry, brown silk means an old cob.
