Kakheti: wine from the country, endless supra and the Caucasus

Amber wine that sleeps in a buried barrel for six months, a table that never gets emptied and mountains on the horizon — Kakheti is hedonism without a brake.

In the courtyard above the village of Sighnaghi, the householder unearthed the lidquevria, plunged a wooden ladle two meters into the ground and pulled out wine the color of liquid amber. No cellar, no oak, no temperature control — just a clay jar buried up to the neck in the ground, in whichskunksit ferments together with the skin, seeds and stem. That wine has a red tannic structure, and the color of the sun at three o'clock in the afternoon. After the first glass, you stop looking for comparisons with what you know.

Why bottle wine is not folklore but an 8,000-year-old technology

Kakheti is the eastern wine region of Georgia, between the Alazani River and the ridge of the Greater Caucasus, approx400–800 meters above sea level. Here, wine is still made using a method that has been inscribed on the list of intangible heritage by UNESCO: the grapes go tokvevri— a clay jar with a volume of 300 to 3000 liters, lined with beeswax and buried in the ground, which keeps it at a stable temperature during fermentation. White grapes (rkaciteli, mcvane) remain on the skinthree to six months, so what the world calls today is bornamberor orange wine, and Georgians have been making it for as long as it has existed.

The result is a wine of tannins and structure, with notes of dried apricots, walnuts and black tea, which is served at14–16 °C— warmer than any white you're used to. If skin-contact fermentation intrigues you, the principle is not far from how the most serious ones are bornwhite wines of the Balkans with maceration. Red is made fromsaperavia, black pulp variety that gives ink in the glass and acidity that survives even the greasiest soup.

Supra: a table that does not empty and a toast that is the law

Georgian feast is calledsupraand lead hertoast— the appointed chairman of the table whose toasts are not decoration but the rhythm of the dinner. Table rule: never refill yourself, wait for a toast before taking a sip, and don't refuse a third round because the host reads a refusal as an insult. Coming hungry is a must.

Views that asphalt deserves

Kakheti is driving. From Tbilisi to Sighnaghi is approx110 kmand an hour and a half drive through the hills towards the Alazan Valley, with the Caucasus as a constant backdrop. Sighnaghi is a walled town above the valley, with a panorama that opens up to snow even in August. The section towards the monasteryStabsand further towards the thermal springs, it rewards every curve. Who likes to combine a wheel and a glass, the principle is the same as onBalkan routes where the route leads to the winery— only here the jars are buried in the ground, and the mountains are a head higher.
