The spoon goes into the cream and meets resistance—one that means it's been sitting for weeks, not two days. That is the first sign that you are in the right place. At 1200 meters, in the kitchen where the wood stove is still heating, breakfast is not a meal but the result of a whole year of work: milk that the cows grazed on a meadow without fertilizers, honey that the bee brought from that same meadow, and bread that the housewife kneaded at five in the morning.

Why mature cream is not the same as young
