Mexico doesn't drink margaritas. Mexico drinks Paloma — from a can, on a bench, at noon when the asphalt shakes. Margaritas are for tourists and for bars that charge for atmosphere; Paloma is for people who are hot and want to stay clear until dinner. The difference is in one thing: bitter grapefruit soda instead of syrup and triple seca. Less sugar, more refreshment.
All five cocktails below share the same rule —tequila blanco, 100% agave, followed to the bone. Leave the reposado to pour over ice; its vanilla smoke is lost in soda and citrus. Paloma and her relatives: bitter cools better than sweet
ClassicPalomais 50 ml of tequila blanco, the juice of half a lime, a pinch of salt and top up with grapefruit soda (Squirt or Jarritos if you can find it, plain bitter lemonade if not). The whole thing lives or dies on the ice — it takes a full hour, not three cubes that melt in a minute. Salt around the rim is optional; there is no salt in the cocktail itself, because it removes the sharpness of the grapefruit.
Ranch Wateris Paloma reduced to the bone: tequila, juice of a whole lime, topped up with mineral water with bubbles (classic Topo Chico). Zero sugar, zero color. This is a cocktail for +38 when you don't want to drink anything sweet — the taste is almost salty from minerals and clean like spring water. Our favorite for after swimming.
Tequila sunrisehere it comes with a caveat: made right (freshly squeezed orange juice, a drop of grenadine that sinks to the bottom, no stirring) it looks and drinks seriously. Made from tetrapak juice and colored syrup, it is a children's juice with alcohol. Squeeze the oranges or skip it.

Two cocktails for those who like spicy
If you like spicy,Spicy Palomagame changer: crush two rings of fresh jalapeño peppers in the bottom of the glass before adding tequila and ice. Anger and grapefruit grab the same receptor and the result is a cocktail that wakes up, not puts you to sleep. For the less brave — one reel is enough.
Batangasis the least known and perhaps the best: tequila, lime juice, top up with cola (real, not diet), and — mandatory — chip in salt first of all. It sounds strange until you try it; cola and agave share a caramelized note that blends better than it has any right to. This is a cocktail from the La Capilla bar in Tequila, where they still mix it with the same knife they used to cut limes.
