Grilled Sea Bass: Queen of the Fish and a Glass of Rosé

A whole fish, salt under the fins, two minutes too many and dinner's done. Here's how to grill sea bass so the skin crackles and the flesh stays succulent.

Fish isn't ruined on the grill — it's ruined before it. A sea bass that smells of the sea on the market stall, with a clear, bulging eye and cherry-red gills, is already half the dinner. One that smells of fish, no matter how you marinate it, remains fish that smells of fish. Rule number one, then, is the market, not the barbecue.

We take portions of 350 to 450 grams per person — enough for the flesh to stay juicy, small enough to cook evenly before the skin scorches. Wild sea bass is better, but pricier and scarce; farmed fish from cages does the job perfectly well if it's fresh. Look for firm flesh that springs back under your finger, and a belly cavity with no dark patches.

A Marinade That Doesn't Smother the Fish

The biggest mistake is a marinade that tries to talk over the sea bass. It doesn't need rescuing — it needs a frame. That's why we go dry, not a bag drowning in vinegar. Scale the fish (dragging the knife from tail to head, under running water), gut it, rinse, and pat it thoroughly dry with paper towel — damp skin sticks to the grate and never develops a crust.

Inside the belly cavity: a slice of lemon, two or three sprigs of rosemary or thyme, and a clove of garlic, halved. On the outside: coarse sea salt rubbed into the skin, a touch of ground pepper, and a thin film of olive oil. The salt draws moisture out of the skin and helps it brown. Let the fish sit at room temperature for 20 to 30 minutes before grilling — cold fish straight from the fridge cooks unevenly and easily stays raw along the spine.

How long do you grill sea bass?
A whole fish of about 400 g cooks for 6 to 7 minutes per side over medium-hot coals. Don't turn it for the first five minutes — the skin releases from the grate on its own once it's ready.
Do you marinate sea bass before grilling?
Yes, but dry: coarse salt, a little olive oil and pepper on the outside, with lemon, rosemary and garlic inside the belly cavity. Lemon juice is added only at the end, over the finished fish, so the flesh doesn't turn mealy.
What wine goes with grilled sea bass?
A dry rosé served at 8-10°C — its acidity cuts through the olive oil and salt, while the skin contact gives it the structure to match the fish's light smokiness. A domestic Prokupac rosé works beautifully.
