Cube vs. crushed is not aesthetics
The difference is physics.Big cube(5x5 cm) has a small surface area compared to its volume, so it melts slowly — it cools the pizza and dilutes it barely perceptibly. It's ice for a pizza that is mademessageand drink slowly: rum on the rocks, Old Fashioned, dark & stormy in a tall glass.
Crushed ice is the opposite philosophy. Huge surface area, fast melting, deliberate dilution. That's NOT a mistake — the Mai Tai, the Zombie, and all the swinging tiki cocktails are designed to include that water in the recipe. Crushed ice cools instantly and creates that frosty layer on the glass. Without it, the tiki cocktail is too heavy and too alcoholic.

Clear ice at home is not magic: fill an insulated box (ordinary styrofoam) with water, put it in the freezer without a lid and freeze from top to bottom for 18-24 hours. The bubble and turbidity will remain at the bottom, the top layer will be glassy. Cut the blocks with a bread knife and a hot tool.

Rum that keeps hot longer

Three cocktails that do not require anything exotic
- Daiquiri: 60 ml of white rum, 25 ml of fresh lime juice, 15 ml of sugar syrup. Shake vigorously with the cubes, strain. No blender, no frozen mixture.
- Dark & Stormy: 60 ml of dark rum over a large cube, add ice-cold ginger beer, a lime wedge. The rum is poured in LAST to create a dark layer.
- Mai Tai: 30 ml aged + 30 ml Jamaican, 15 ml lime, 15 ml orgeat, 10 ml curacaa. Over full crushed ice, a sprig of mint.
So much. A hot evening doesn't require more than two types of ice, three rums, and the hands that bind the lime don't replace it with syrup.
