Dry neck, nuts and cheese: a morning that does not recognize the clock

Thinly sliced ​​dry neck, halved walnut and a piece of hard cheese with the first coffee — a meze that tells the body that it doesn't have to go anywhere today.

The knife should be sharp and the hand slow. Dry neck is not cut like salami — you want a slice thin enough for light to pass through, so that the fat and meat remain in the relationship in which drying left them. When such a slice lies next to a halved walnut and a cube of hard cheese, and a cup of coffee is still smoking on the side, the morning has acquired a pace that no breakfast with a plate, fork and knife can reach.

This is not a meal. This is a ritual that is eaten with the fingers while being silent or talking quietly, and which has only one rule:there is no rush anywhere.

Why dry neck and not prosciutto

The dry neck (vrata) is meatier and fattier than the leg, with a marbling that melts on the tongue before you chew it in a good piece. Homemade, smoked and then dried for three to four months, has a saltiness that doesn't hit but opens up — and that's why it looks for an accompaniment that neutralizes it. That's where they come inwalnut and cheese.

Walnut brings bittersweet fat and crunch; fresh kernels from this year's crop, not the ones that have been sitting in a jar since last fall and smell of oil that has started. The cheese chooses the role: the young cow's cheese calms the saltiness of the meat, while the mature, hard cheese—six-month-old semi-hard sheep's cheese, for example—plays equally, salt against salt, fat against fat. If you like the mountain variant, the same logic is behind itcream, honey and hot bread, only here everything is dry, cold and for the fingers.

Coffee that carries salt, does not run away from it

Savory meze and coffee are not a random pair. The bitterness of an espresso or home-brewed jezva cuts through the fat of a dry neck just as a sip of water cleanses the palate between bites. You are wrong if you drink something sweet and milky with this meze — a cappuccino with two spoons of sugar drowns the meat. There is black coffee, medium roasted, without much acid; or, if the heat has already arrived, the same coffee over ice.

It doesn't match randomly. The meat goes in the middle, folded thinly to keep the temperature of the hand; nuts on one side, cheese on the other, so that the flavors don't mix before you put them together in your mouth. Something sour — a few drops of wine vinegar on cheese or a pickle ring — wakes up the whole plate. Bread is optional: if you put it, let it be toasted, so that the crunch matches the walnut.

Temperature is half the story

A dry neck from the refrigerator is a mistake. Take it out20 minutes before servinglet the fat come to room temperature — only then release the aroma of smoke and ripeness. Cheese too: cold cheese is mute cheese.
