From Nova Pazova to Ajdovščina — five breweries and specific labels that the fridge on the terrace deserves this August.
The fridge on the terrace in August has exactly one task: to make the second can better than the first. Industrial lager can't do that — the second one is the same as the first, and thus already boring. Craft beer moves the target: hops that change as the can heats up, acidity that brings back saliva, bitterness that sticks. We did not make a top-list on paper. These are five breweries we really drank this summer, and five labels worth looking for by name.

The five we drank, not the five we read
Cabinet(Nova Pazova, open since 2013) is still the easiest entry point. TheirsSupernovais a session pale ale declared around 4.5% — a beer to drink, not study: citrus hops up front, bitterness short, second beer desirable. For a step deeper into hops, look to their IPA line, where the bitterness lingers long after the sip.
Dogma(Belgrade) is a brewery for those who like their beer to be a little naughty — sour series and barrel-aged experiments. You're not blind buying a bottle here; ask for the current onegoseor sour from the seasonal series, because the labels rotate. Why are they eating at +35? The salt in the recipe enhances the impression of ripeness and fullness, and the lactic acid (beer is usually at a pH below 3.6) cuts the fat on the plate and drives the salivary glands — after a bite of sardine or prosciutto, the mouth seeks the next sip instead of water. It's a beer that works withgrilled fishbetter than most white wines.

across the borderDragon Brewery(Zagreb, since 2013) holds two extremes.Dragon Pale Ale(5.0%) is a balanced daily pale, aPoseis twice as strong, an imperial story of about 8% for the evening when not driving.The Garden Brewery, also from Zagreb, is one of the few regional breweries whose cans make it to Western European bottle-shops — their hazy, dry-hopped IPA batches change almost weekly, so grab the most freshly dated.
The fifth is SlovenianPelicon(Ajdovshchina). TheirsOblais a peachy NEIPA with mango-scented hops and very little bitterness—a beer for someone who thinks they don't like IPAs. It is drunk cold, but not iced, and from a young can, because the aroma of cloudy IPA fades in a few weeks.

Prices are our measure from Belgrade shelves and specialized stores this summer; import (Zmajska, Garden, Pelicon) always costs more than domestic. One rule above all: watch the filling date. Hop beer older than two or three months has lost half the reason you are paying for it.
