Acacia stays clear for months, chestnut is bitter, linden smells like a flower. How to separate real honey from syrup by taste and crystallization.
A spoonful of acacia honey from autumn is still as clear as water — and that's not a flaw, it's a proof. Honey that remains liquid for months is not counterfeit; honey that hardens in three weeks doesn't have to either. Everything depends on which flower the bee found, and that flower also writes the taste and speed of crystallization. The three Serbian honeys that every hedonist should distinguish are acacia, linden and chestnut — and all three are already distinguishable on the tongue.
A flower describes taste, a flower also describes crystallization
The rate of crystallization is not a matter of quality but of chemistry — specifically of ratiofructose and glucose. Glucose crystallizes, fructose remains liquid. Honey rich in fructose is clear for a long time; honey rich in glucose turns into sugar quickly.
Acaciait has the highest proportion of fructose of our three (fructose/glucose ratio often over 1.4), so it remains liquid for a year and a half. Its color is light, almost straw-like, its taste is mild and floral, without bitterness — honey that does not overpower the tea or the pancake.Linden treeis more golden, more fragrant, with a clear floral note and a slight menthol trace in the throat; it crystallizes moderately, in a few months, into small grains.Chestnutis a different story: dark, dense aromas, withpronounced bitternesswhich remains after a sip. How not to be deceived
Counterfeit is most often honey diluted with sugar or glucose syrup, or honey from flowers fed by bees — it is difficult to detect with the naked eye, but a few checks separate the wheat from the chaff. Crystallizationit is nota sign of fraud; on the contrary, honey that never crystallizes (except acacia) should worry you, because it is probably overheated above 40 °C or salted with syrup.

Spoon test: real honey flows in a continuous, thick thread and forms a small pyramid that spills easily. Diluted honey drips and blends quickly. Smell is another key — real honey always carries the aroma of the flower it came from; the syrup smells like nothing or caramel. The most reliable move is not a test but an address: buy directly from the beekeeper with declaration, origin and vintage. The price below three euros for a half kilo jar on the market is a red flag — serious monofloral honey (acacia, linden, chestnut) costs more because it requires a single pasture.
Flawless serving
Never put honey in boiling tea — above 40 °C it loses enzymes and aromatics. Add it when the drink comes down to drinking temperature. Chestnut goes with mature cheese and walnuts, as a counterpoint to salty — the same logic as when pairing honey andof mature cheese. Leave the acacia for what must not be overdone.
