Greek meze on the terrace: tzatziki, choriatiki and halloumi
Four plates, one bottle of Assyrtiko and a woman who doesn't stare — how the Greek terrace works together to make each bite work for the next.
Halloumi sizzles on the grill only when the edges start to darken, not before — that's the moment when the cheese stops being rubbery and becomes crispy on the outside, soft on the inside. The rest on the table is already ready: the tzatziki has cooled for an hour, the tomatoes for choriatiki are salted to release their juice, a bottle of asyrtika is sweating in a bucket of ice. Greek meze is not an appetizer. It's a whole dinner eaten slowly, with your hands as much as with a fork, while the sun goes down.
The secret is not in the recipes — they are simple to the point of banality. The secret is in the order, the temperature and the fact that no plate tries to be the star. Each works for the next: the acid of the yogurt cleans the palate after the salty cheese, the olive oil from the salad catches the salt, a sip of wine resets everything.
Four plates that do not compete
Tzatziki starts with strained yogurt. Leave Greek yogurt with 10% fat in cheesecloth or a sieve for 2 hours to get rid of the whey — otherwise you will get soup, not cream. Grate the cucumber coarsely, add salt, then itsqueeze with your handsuntil it stops dripping; it is a step that most people skip and because of which the cassock becomes watery. Garlic, a drop of red wine vinegar, olive oil. It rests in the refrigerator for at least an hour, ideally overnight.
Horiatiki — Greek peasant salad — has no lettuce. Whoever puts it in, makes another dish. Ripe tomatoes cut into large slices, cucumber, thinly sliced red onion, green pepper, Kalamata olives and a whole slab of feta cheese on top, not crumbled. Salt, oregano, olive oil. Nothing more. Feta is not meat; it stands like a lid and melts from the heat of the tomatoes.
Halloumi is the only one who asks for fire. It is cut into slices of1 cm— the thinner one burns, the thicker one remains raw in the middle. Grill or dry grill pan, without oil because the cheese has enough fat. 2 minutes on each side until golden streaks appear. It is removed and immediately poured with lemon; the acid wakes him up. Why Assyrtiko, and not just any white
Assyrtiko from Santorini grows on volcanic ash, in low baskets twisted against the ground to protect the vine from the wind. That wine has an acidity that cuts through the olive oil and the saltiness of the feta like nothing else — it's mineral, almost salty, with a hint of lime and flint. Chilled at8-10°Cit does not extinguish the meze, it sharpens it.
If Santorini is not at hand or in the budget, Assyrtiko from the mainland (Halkidiki, Attica) is milder and cheaper, but it works. An alternative from our backyard?
