Bruschetta at the end of the harvest and a burning sensation that you can't get over

That scratch in the throat after the first sip of new oil is not a flaw — it's oleocanthal, the only fair test that the oil is young and alive.

You try the first teaspoon of new oil, and a second later something scratches at the base of your throat — you cough two or three times in a row, you almost become confused. That scratch is not a flaw. It is the fairest proof that the oil is what the label promises.

The end of October and November are the only two months of the year when olive oil has a taste that most people never taste. Freshly squeezed, unfiltered, still cloudy from tiny fruit particles —olio nuovo. Warm bread, a finger of that oil over the crust, a pinch of coarse salt. Nothing more. Everything else is moving away from the olive grove.

Why does good oil burn and bad oil just slides

A burning sensation in the throat has a name and a formula:oleocanthal, a natural phenol that is formed when the olive is ground. It stimulates the same receptor in the pharynx (TRPA1) as ibuprofen — hence the mild anti-inflammatory effect that laboratories have been writing about for decades. It goes with himoleacein, which gives bitterness in the middle of the tongue. Together they are a biomarker of the oil's youth.

Refined oil from the supermarket shelf has no burning because it has no phenols — the manufacturing process has removed them along with the smell and color. Practical conclusion: if the oil in the store makes you cough, you are leaving the vapors in the box well. If it slides without a trace — you bought calories, not oil.

Bread warm, oil cold, coarse salt

Classic Tuscanfettunta(literally "oiled slice") is done in one non-negotiable way. A thick slice of bread with a firm center, the crust burnt on the grill or in a pan without fat. While it's still hot, you rub it with a cut clove of garlic — the heat melts the oil from the onion into the skin. Then oil, generously, in a thin stream. Salt at the end.

The mistake that everyone makes: the oil does not cook. Phenols and aroma evaporate above40–50 °C, so the new oil goes on the bread only after it comes off the fire, never into the pan before. The bread must be warm; the oil must remain at room temperature. The same logic as with cold soups — ugazpacho and salmoreyathe oil is added at the end, raw, so that it has anything to contribute at all.

How to recognize real young oil

The color is between gold and intense green, often cloudy if not filtered. Smell of fresh cut grass, artichoke, green tomato. In the mouth: bitterness on the tongue, then that scratch in the throat a few seconds later. The harvest date on the label — not the expiration date — must be from the current season. Oil lives best for the first 12 to 18 months; after that the phenols quietly leave.

Where to get fresh oil in the region

Istria and Bar are the nearest serious sources. In Istria (Vodnjan, Brtonigla, around Buja) producers sell fresh-harvested oil directly, often varietal —Buža, Istrian Bjelica, Leccino. The Montenegrin coast and the old olive groves around Bar produce oil from the fruits of trees over a hundred years old. At both addresses, the rule is the same: look for a dark glass or tin bottle, never clear plastic from a shelf standing in the light.

When you bring it home, keep it in the dark, away from the stove, tightly closed. Light and heat are enemies of phenol as much as time.
