The wine that the beach is looking for, the wine that dinner deserves

The same wine cannot withstand sand at +34 and a plate of sea bass at dusk. Three bottles, three roles, one weekend.

A bottle that was perfect on the beach at two in the afternoon next to the fish seems like a mistake. And vice versa. A weekend at sea has three scenes—sand and salt in the air, the terrace at dusk, and the plate that comes when the sun goes down—and each calls for a different hour. We carried three bottles of cocoa with ice through the Dalmatian weekend and here's what lasted, and what fell apart as soon as the temperature rose.

Plaza is looking for a wine that doesn't mind the heat

On the beach, wine works under the worst conditions: the glass heats up in five minutes, the palate is dull from the sun and salt, and the last thing you want is something heavy and alcoholic. That's where he winsIstrian Malvasia— rare vintage from the lower regions of Istria, a fresh version without aging in wood, with 12.5 to 13 vol% alcohol and that distinctive bitter almond shell finish that awakens the palate instead of tiring it.

Look for a young vintage, 2023 or 2024, and keep an eye on it8-9 °C— cold enough to withstand heating in the cup for another ten minutes. When Malvasia does become too warm, it goes into boredom; so keep it in a cup with ice and take it out every hour. Rosé as a bridge between the beach and the plate

There is an hour between the beach and dinner when nothing dry and white fits, and red is still too early. That's where it comes indry rosé— best domestic, fromPro-buyer, from the south of Serbia or from Zupa, the color of a pale pomegranate and the smell of strawberry and watermelon. Not sweet, commercial rosé, but dry, with fat-slicing acidity.

Serving on10-12 °C. Rosé also holds up to appetizers—pomidoro, prosciutto, pasta with shellfish—and sits on its own as an aperitif better than any spritz. If you don't know which style to get, we've gone through everything inwater through rosé. Advantage: it often costs less than imported Malvasia, and it does the same job on the terrace.

Dinner calls for red - but chilled

When it comes to grilled fish or grilled meat, white and rosé become too thin. But the warm red in August is a punishment. A solution that few people apply:light red, mucus cooled. A rule worth remembering: red wine is chilled, white wine is not heated. At sea, it makes the difference between the wine you drink and the wine you suffer.

How to keep them cool all day

Without a refrigerator on the beach, coffee with ice and salt in the water keeps the bottle below 12 °C for two or three hours. Wrap the bottle in a wet cloth if there is no ice — evaporation cools. For dinner, take the red out of the refrigerator 20 minutes earlier and let it reach 15 °C in the cup.
