Homemade ice cream without a machine: a base that does not split

Egg yolks, milk and sugar in the right ratio make a cream that stays soft even from the freezer. And a pinch of salt is a secret enhancer.

Purchased ice cream melts in three strokes of the piggy bank; homies, if you screw it up, it comes out of the freezer hard as a brick and full of ice crystals. The difference is not in the machine — the difference is in how much fat and egg yolks keep the water from following into large crystals. The base is chemistry, not luck.

It is the basis of every real ice creamcrème anglaise— boiled cream of milk, egg yolks and sugar. Egg yolks are an emulsifier: the lecithin from them binds fat and water, so the mixture remains smooth. Sugar lowers the freezing point, which is why ice cream with too little sugar becomes hard, and ice cream with too much never sets. It's all about the relationship.

A relationship that works every time

For about a liter of mixture, we stick to the proven proportion. Whole milk and cream provide fat (ideally 12–16% of total fat in the mixture), egg yolks provide creaminess, sugar provides structure and softness.

Heat the milk and cream to the point of boiling. Beat the egg yolks and sugar until they turn pale, then pour in the warm milk while constantly stirring - timing, so that the egg yolks don't cook in the scrambled eggs. Return to low heat and cook until82–84°C, until the cream coats the applicator so that a finger pulled over it leaves a clean line. Above 85°C, the yolks seize and the base splits. This principle of cooked foundation is the same as any serious homemade foundation — asdashi that carries the entire ramen, and here the temperature decides everything.

Why a pinch of salt changes everything

Salt doesn't make ice cream salty—it makes ittastier. Sodium suppresses the perception of bitterness and enhances the contrast, so the brain reads sweet more clearly and more fully. The same trick is behind why fleur de sel caramel works deeper, and whygood coffeewith a little salt, it loses its sharp bitterness. One gram per liter is the limit: enough to feel the difference, too little to recognize it as salt.

Without a machine, breaking the crystals is key. Pour the cooled base (overnight in the refrigerator, so that the fat crystallizes) into a shallow dish and put it in the freezer. Every one30–40 minutes, during the first 2-3 hours, mix vigorously with a fork or mixer to break the ice that clings to the edges. The more often you mix, the finer the crystals, the creamier the texture. A spoonful of alcohol (rum, vodka) or glucose syrup additionally softens the result because the alcohol does not freeze.

Ready-made ice cream is best after 30 minutes out of the freezer in the refrigerator — served on-11 to -13°C, when it is soft and holds its shape.
